Description

A flavorful and crispy Mediterranean-inspired chickpea patties recipe served with a tangy homemade yogurt sauce, perfect for a light lunch or dinner.

Ingredients

Scale

Patties

  • 12 oz canned chickpeas (drained)
  • 1 tsp ground cumin
  • 1/2 tsp freshly ground black pepper
  • 1 tsp sea salt
  • 2 green onions, minced
  • 2 cloves garlic, minced
  • 1/2 cup all-purpose flour (or chickpea flour)
  • 1 egg
  • 1/4 cup grapeseed oil (or other neutral oil, for frying)

Yogurt Sauce

  • 1/2 cup Greek yogurt (or sour cream)
  • 1 tbsp lemon juice (from 1/2 lemon)
  • 2 tbsp fresh dill, minced
  • 1 clove garlic, minced
  • 1 tsp sea salt

Instructions

  1. Prepare Chickpeas: Drain chickpeas well and pat dry to remove excess moisture. Mash them in a large bowl until coarse but retaining some texture.
  2. Mix Ingredients: Add ground cumin, freshly ground black pepper, sea salt, minced green onions, minced garlic, flour, and egg to the mashed chickpeas. Mix thoroughly and knead the mixture until it forms a dough-like consistency suitable for shaping.
  3. Heat Oil: Pour grapeseed oil into a frying pan and heat over medium-high heat until hot but not smoking.
  4. Form Patties: Scoop about 3 tablespoons of the chickpea mixture per patty and shape each into flat rounds. Carefully place the patties into the hot oil in the pan.
  5. Fry Patties: Cook patties for 4 minutes on each side or until they turn golden brown and crisp. Once cooked, transfer them to a wire rack to cool slightly and maintain their crispiness.
  6. Make Yogurt Sauce: In a bowl, combine Greek yogurt, lemon juice, minced dill, minced garlic, and sea salt. Stir well and chill until ready to serve.
  7. Serve: Plate the warm chickpea patties and serve alongside the chilled yogurt sauce for dipping or topping.

Notes

  • Cool patties on a wire rack instead of paper towels to keep them crispy.
  • Use chickpea flour instead of all-purpose flour for a gluten-free version.
  • Substitute fresh parsley or mint for dill to vary the flavor of the yogurt sauce.
  • For a healthier alternative, bake patties at 400°F for 20 minutes, flipping halfway through.
  • Store leftover patties in the refrigerator for up to 3 days and reheat in a skillet or oven to maintain crispiness.
