Instructions
- Prepare Chickpeas: Drain chickpeas well and pat dry to remove excess moisture. Mash them in a large bowl until coarse but retaining some texture.
- Mix Ingredients: Add ground cumin, freshly ground black pepper, sea salt, minced green onions, minced garlic, flour, and egg to the mashed chickpeas. Mix thoroughly and knead the mixture until it forms a dough-like consistency suitable for shaping.
- Heat Oil: Pour grapeseed oil into a frying pan and heat over medium-high heat until hot but not smoking.
- Form Patties: Scoop about 3 tablespoons of the chickpea mixture per patty and shape each into flat rounds. Carefully place the patties into the hot oil in the pan.
- Fry Patties: Cook patties for 4 minutes on each side or until they turn golden brown and crisp. Once cooked, transfer them to a wire rack to cool slightly and maintain their crispiness.
- Make Yogurt Sauce: In a bowl, combine Greek yogurt, lemon juice, minced dill, minced garlic, and sea salt. Stir well and chill until ready to serve.
- Serve: Plate the warm chickpea patties and serve alongside the chilled yogurt sauce for dipping or topping.
