  • 1 1/4 cup medjool dates, packed and pitted
  • 2 cups Let’s Do Organic Unsweetened Toasted Coconut Flakes, plus more for topping
  • 1/4 cup natural almond butter
  • 1/2 cup vegan dark chocolate, chopped
  • 1 tsp coconut oil


Instructions

  1. Process Dates: Place the medjool dates in a food processor and blend until a sticky ball forms. Turn off the processor and break up the date ball with your hands into smaller pieces to ensure even blending.
  2. Combine Ingredients: Add the toasted coconut flakes and almond butter to the food processor with the dates. Blend again until the mixture is well combined, being careful not to over blend to prevent releasing oils from the almond butter.
  3. Press Mixture: Line a 6×6 inch pan with parchment paper and press the date and coconut mixture evenly into the pan’s bottom. Cover and refrigerate for 1 hour to set.
  4. Melt Chocolate: In a microwave-safe bowl, combine the chopped vegan dark chocolate and coconut oil. Microwave in 15-second increments, stirring between each, until melted and smooth.
  5. Slice and Dip Bars: Remove the set mixture from the fridge and cut into 6 bars. Dip the bottom half of each bar into the melted chocolate and place on a parchment-lined tray.
  6. Decorate and Chill: Drizzle the remaining melted chocolate over the tops of the bars and sprinkle additional toasted coconut flakes. Chill again until the chocolate hardens.
  7. Serve and Store: Enjoy immediately or store the bars in an airtight container in the refrigerator for up to one week.
