Sweet Potato Rounds

- 1 teaspoon kosher salt

- 1 tablespoon regular or hot honey

Instructions
- Preheat the oven: Set your oven to 425°F to ensure it’s properly heated for roasting the sweet potatoes.
- Prepare the sweet potatoes: Wash and dry the sweet potatoes thoroughly. Slice them into 1/3-inch thick rounds to ensure even cooking and crispiness.
- Coat with oil: Drizzle olive oil onto a large rimmed sheet tray, then add the sweet potato rounds. Turn them carefully to coat evenly in the oil, making sure the slices aren’t touching to allow proper roasting. Use two trays if necessary.
- Season and add honey: Sprinkle the cinnamon, smoked paprika, cumin, coriander, red pepper flakes, kosher salt, and black pepper evenly over the potatoes. Drizzle the tablespoon of honey on top and turn the rounds again so all slices are well-coated in the seasoning and honey.
- Roast the sweet potatoes: Place the trays in the oven and roast for 20 minutes. Then flip each sweet potato round carefully and return to the oven for another 25 minutes until they are golden brown and crispy around the edges.
- Transfer and garnish: Carefully move the roasted sweet potatoes to a serving platter. Sprinkle a little extra kosher salt for seasoning, drizzle additional honey over the top, and crumble the feta cheese evenly. Finish by sprinkling fresh chopped chives or parsley.
