Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 350F and line an 8×8 inch baking pan with parchment paper or foil and set aside.
  2. Cream Butter and Sugars: In a large bowl, cream the butter, granulated sugar, and brown sugar together until smooth and creamy. Then add the egg, almond extract (if using), and vanilla extract, mixing to combine well.
  3. Add Dry Ingredients: Mix in the flour, baking powder, salt, and cornstarch just until the flour mixture barely disappears, making sure not to overmix.
  4. Bake the Cookie Layer: Spread the batter evenly into the prepared baking pan and bake in the preheated oven for 15 minutes. The center may look slightly raw but will continue baking as it cools.
  5. Make the Frosting: In a large bowl, whip the softened butter and powdered sugar together until combined. Add the heavy cream and vanilla extract, then whip until light and fluffy.
