Delicious and easy-to-make Santa Fe Turkey Sliders featuring spicy mayo, tender turkey, pepper jack cheese, and a flavorful butter sauce, baked to perfection on soft Hawaiian rolls.

Spicy Mayo
- 1/4 cup mayonnaise
- 1/2 teaspoon paprika
- 1/2 teaspoon yellow curry powder
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon salt
Sandwiches
- 12 count package Hawaiian rolls
- 1 pound deli sliced turkey
- 8 ounces shredded pepper jack cheese
- 1 (7 ounce) can diced green chiles, drained
Butter Sauce
- 1/2 cup melted butter
- 1 tablespoon poppy seeds
- 1 tablespoon dijon mustard
- 1 tablespoon onion powder
- 1 teaspoon Worcestershire sauce
Instructions
- Preheat Oven: Preheat oven to 350 degrees Fahrenheit. Lightly grease a 9×13 or 8×11-inch baking pan.
- Make Spicy Mayo: In a small bowl, stir together mayonnaise, paprika, yellow curry powder, cayenne pepper, and salt until well combined. Set aside.
- Prepare Rolls: Remove the 12 count Hawaiian rolls from packaging as a whole slab. Slice the rolls in half lengthwise to create two slabs, top and bottom. Place the bottom slab in the prepared baking pan.
- Assemble Sliders: Spread the spicy mayo evenly over the bottom slab. Sprinkle half of the shredded pepper jack cheese over the mayo layer. Layer deli sliced turkey evenly over the cheese. Spoon diced green chiles on top of the turkey, spreading to cover. Sprinkle the remaining pepper jack cheese over the chiles. Place the top slab of rolls on top to complete the sliders.
- Prepare Butter Sauce: In a small bowl, whisk together melted butter, poppy seeds, dijon mustard, onion powder, and Worcestershire sauce until well blended.
- Apply Butter Sauce: Drizzle or brush the butter mixture evenly over the top of the slider sandwiches.
- Bake: Loosely cover the baking pan with aluminum foil. Bake in the preheated oven for 10 minutes or until cheese is completely melted and the sliders are heated through. Serve hot.
Notes
- You can substitute pepper jack cheese with Monterey Jack or cheddar for milder flavor.
- For a spicier kick, add extra cayenne or jalapeños to the spicy mayo.
- If Hawaiian rolls are not available, soft dinner rolls or slider buns can be used.
- Butter sauce can be brushed multiple times during baking for extra flavor and moisture.
- Leftover sliders can be reheated in the oven wrapped in foil to preserve moisture.
