- 1/2 cup semisweet chocolate chips
- 2 tablespoons honey plus more if needed
- 1 1/2 cups finely ground vanilla wafer crumbs or shortbread crumbs
- 1 1/2 cups finely ground walnuts or ground pecans
- 3-4 tablespoons bourbon whiskey such as Wild Turkey or Jim Beam
For Rolling
- 1/2 cup ground walnuts reserved from the total 1 1/2 cups
Instructions
- Reserve Nuts: Pour 1/2 cup of the ground walnuts into a small bowl and set aside for rolling the bourbon balls later.
- Melt Chocolate and Honey: In a 1 1/2 quart microwaveable bowl, combine the chocolate chips and honey. Microwave at full power for 1-2 minutes, stirring every 30 seconds, until the mixture is smooth and free of lumps.
- Mix Ingredients: Stir in the ground vanilla wafers, the remaining ground walnuts, and bourbon whiskey into the melted chocolate mixture. The mixture should be thick but scoopable.
- Form Balls: Scoop the mixture by level tablespoons and roll into balls with your hands, packing them firmly.
- Roll in Nuts: Roll each bourbon ball in the reserved 1/2 cup ground walnuts to coat evenly.
- Store and Develop Flavor: Store the bourbon balls tightly covered in a container. Allow flavor to develop for four days. Properly stored, they will keep up to 4 weeks.
Notes
- If you do not have a microwave, melt the chocolate and honey over medium-low heat in a saucepan, stirring until smooth.
- The mixture should be thick but easy to form into balls; if too dry, add a splash more bourbon.
- If the mixture is too crumbly, add an additional tablespoon of honey to help bind.
- For best flavor, allow the balls to rest covered for four days before serving.
