Instructions
- Preheat the oven. Set your oven to 350°F to prepare for baking the pumpkin bars.
- Prepare the crust. In a 9×13-inch pan, combine the crushed graham crackers and melted butter. Mix well and press evenly into the bottom of the pan. Set aside this crust layer.
- Make the filling. In a medium bowl, beat the eggs and granulated sugar with an electric mixer until combined. Add the pumpkin puree, evaporated milk, salt, and pumpkin pie spice, then mix until all ingredients are well incorporated. Pour this filling evenly over the prepared crust.
- Prepare the streusel topping. In a clean bowl, combine flour and light brown sugar. Cut in the cold butter until the mixture is crumbly. Mix in the ground cinnamon and chopped walnuts. Sprinkle the streusel topping evenly over the pumpkin filling in the pan.
- Bake the bars. Place the pan in the preheated oven and bake for about 35 minutes, or until a toothpick inserted into the center comes out clean.
