Description

  • 1 (15 oz) can fire-roasted corn, drained
  • 1/4 cup green onions, diced

Instructions

  1. Drain Ingredients: Drain all canned ingredients thoroughly and pat them dry with paper towels to remove excess liquid, ensuring the filling is not watery.
  2. Mix Filling: In a large bowl, beat the cream cheese until smooth. Add the ranch seasoning mix and all the diced vegetables, then mix well until fully combined.
  3. Spread Mixture: Lay a tortilla flat on a clean surface. Spread a thin, even layer of the cream cheese mixture over the tortilla, leaving about a 1-inch border on the left and right edges free of filling to make rolling easier.
  4. Roll Tightly: Starting from one edge, roll the tortilla tightly into a log shape. Wrap it tightly in plastic wrap to maintain shape. Repeat for remaining tortillas and filling.
  5. Chill Rolls: Place the wrapped rolls in the refrigerator and chill for 45 minutes to firm up and make slicing easier.
  6. Slice and Serve: Remove the plastic wrap and slice each roll into 1/2-inch wide rounds. Discard the small edges without filling before serving. Serve immediately for best freshness.
