  • 3 very ripe bananas
  • 1/4 cup smooth natural peanut butter
  • 1 teaspoon vanilla extract
  • 1 1/4 cup instant or quick cooking oats
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup chocolate chips


Instructions

  1. Preheat oven and prepare pan: Preheat your oven to 350 F. Grease a loaf pan or line it with parchment paper to prevent sticking.
  2. Mash bananas and mix wet ingredients: In a large bowl, mash the ripe bananas until almost smooth. Stir in the peanut butter and vanilla extract until well combined.
  3. Combine dry ingredients: Add the oats, salt, and baking powder to the banana mixture. Mix thoroughly to combine all ingredients evenly.
  4. Add chocolate chips: Fold in 1/3 cup of the chocolate chips into the batter, reserving the remaining chips for topping.
  5. Fill pan and top with chocolate chips: Pour the mixture into the prepared loaf pan and spread it evenly with a spoon or spatula. Sprinkle the remaining chocolate chips over the top.
  6. Bake the bars: Bake in the preheated oven for 30 minutes, or until a knife inserted in the center comes out clean and the bars are set.
