Instructions
- Prepare the chicken: Pat the chicken breasts dry with paper towels. If the breasts are very thick, pound them gently to an even thickness using a meat mallet. Season both sides with 1 teaspoon salt and 1/2 teaspoon black pepper.
- Sear the chicken: Melt 1 tablespoon of butter in a large, deep skillet over medium-high heat. Add the chicken breasts and cook for about 5 minutes on each side until they are golden-brown and cooked through.
- Sauté garlic: Reduce the heat to medium and add the minced garlic to the skillet. Cook for 1 minute, stirring frequently to avoid burning and bitterness.
- Cook noodles: Pour in 2 cups of low-sodium chicken broth and bring it to a boil. Stir in the 8 ounces of wide egg noodles, cover the skillet, and simmer for 10 minutes until the noodles are tender and the chicken reaches an internal temperature of 165°F.
- Finish and serve: Remove the skillet from heat and stir in the remaining 3 tablespoons of butter until fully melted. Taste and adjust seasoning with additional salt if needed. Sprinkle 1/4 cup fresh chopped parsley over the dish and serve warm.
