Ingredients
Scale
Sausage
- 2 rings (13.9 ounces each) Kielbasa
Mustard Sauce
- ¼ cup (62 g) coarse ground Dijon mustard
- 2 tablespoons apple cider vinegar
- 2 tablespoons light brown sugar
- 1 teaspoon Worcestershire sauce
Dipping Sauce
- 2 tablespoons mayonnaise
- parsley, chopped for garnish
Instructions
- Slice Kielbasa: Slice the Kielbasa into ¼-inch slices, but not all the way through by placing the kielbasa between two chopsticks or skewers to prevent cutting completely through. Use a sharp knife and slice downward stopping at the chopsticks.
- Cut into Bite-Sized Pieces: Slice the sausage crosswise into 1-inch bite-sized pieces, about three rings per piece, yielding approximately 40 bites total.
- Prepare Mustard Sauce: In a small bowl, combine the Dijon mustard, apple cider vinegar, brown sugar, and Worcestershire sauce. Divide the mixture into two bowls.
- Make Dipping Sauce: To one bowl of the mustard mixture, add mayonnaise and stir well. Cover and refrigerate this mayonnaise-based dipping sauce while preparing the bites.
- Coat Kielbasa Bites: Pour or brush about half of the other mustard mixture over the Kielbasa bites, ensuring the sauce gets in between each cut section. Reserve the remaining half for after cooking.
- Air Fry Kielbasa: Arrange the Kielbasa bites in a single layer in the basket of an air fryer. Cook at 400°F for 9 minutes, shaking the basket halfway through to brown evenly. Cook in batches if necessary.
- Finish and Serve: Remove the bites from the air fryer and place them on a large platter. Pour or brush the reserved mustard sauce over each bite. Garnish with chopped parsley and serve warm alongside the refrigerated dipping sauce.
Notes
- Oven alternative: Preheat oven to 425°F and line a large baking sheet with parchment paper. Prepare bites as instructed and brush with mustard sauce. Bake for 20 minutes until browned and serve with dipping sauce.
- Using chopsticks or skewers to keep cuts from going all the way through helps the sauce seep into the folds of the sausage for better flavor.
- You can substitute regular Dijon mustard if coarse ground is unavailable.
- Adjust the brown sugar amount to taste for more or less sweetness in the mustard sauce.
- For a spicier kick, add a pinch of cayenne pepper or hot sauce to the mustard mixture.
