Instructions

  1. Melt Caramel: Set up a double boiler over medium-low heat and melt the caramels, sweetened condensed milk, and butter, stirring continuously until a smooth caramel mixture forms. Alternatively, melt the mixture in a microwave-safe bowl on low power, stirring regularly to prevent scorching.
  2. Prepare Work Area: Line a large rimmed baking pan with wax paper for easy transfer and cooling of the puffs. Place 2 cups of rice cereal into a medium wide bowl and set aside.
  3. Dip Marshmallows: Drop one marshmallow into the warm caramel mixture. Using two forks, completely cover the marshmallow with caramel by turning it quickly. Lift it out and tap the fork on the bowl edge to let excess caramel drip back into the mixture.
  4. Coat with Cereal: Transfer the caramel-coated marshmallow to the bowl of rice cereal. Using a third fork, roll the marshmallow around until fully coated with cereal. Then place it on the prepared pan. Repeat the dipping and coating process for all marshmallows, adding more rice cereal into the bowl as needed. Working with 3 to 4 marshmallows at a time will speed up the process.
  5. Set and Store: Allow the caramel to set completely on the puffs. Store them in an airtight container separated by wax paper layers. Keep refrigerated if consuming within a couple of days, or freeze for longer storage. These puffs are enjoyable even when eaten slightly frozen.
