Egg Wash
- 1 large egg, room temperature
- 1 Tablespoon water

Instructions
- Thaw and Prepare Pastry: Thaw puff pastry sheets according to package directions. Preheat the oven to 375℉ (190℃). Line two sheet pans with parchment paper and set aside.
- Cut and Fill Bottom Layer: Working with one sheet of pastry at a time, unfold the dough and smooth the seams. Cut into six equal rectangles. Place rectangles on the prepared sheet pan. Spoon 2 tablespoons of strawberry jam in the center of each rectangle, spreading evenly while leaving a ½-inch border on all sides.
- Apply Egg Wash to Edges: In a small bowl, whisk together the egg and water to make the egg wash. Using a pastry brush, brush the egg wash around the edges of each jam-filled rectangle.
- Prepare and Seal Top Layer: Unfold the second sheet of puff pastry and smooth the seams. Cut into six equal rectangles. Place one rectangle at a time on top of each jam-filled rectangle. Press gently to seal. Use a fork to crimp the edges carefully, avoiding piercing through the dough.
- Apply Egg Wash on Top and Chill: Brush the tops of the sealed pastries with egg wash. Place the pastries in the freezer for 30 minutes to chill and set.
- Bake the Pastries: Bake in the preheated oven for 25 minutes, or until the pastries are golden brown and cooked through.
- Prepare Icing: In a small bowl, whisk together the powdered sugar, whole milk, and optional vanilla powder until smooth.
- Drizzle Icing on Warm Pastries: Once the pastries have cooled slightly, drizzle the icing over the tops for a sweet finishing touch.
