Bar Layer
- 1/2 cup (1 stick) butter, at room temperature
- 1/2 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla
- 2 cups graham cracker crumbs
- 1 cup flaked coconut
- 1/4 cup chopped walnuts
Frosting
- 1/2 cup (1 stick) unsalted butter, at room temperature
- 2 teaspoons milk
- 2 cups powdered sugar
Chocolate Layer
- 12 oz chocolate chips
- 2 tablespoons butter
Instructions
- Prepare the Bar Layer: Preheat the oven to 350°F. In a mixing bowl, beat together 1/2 cup butter and 1/2 cup granulated sugar with an electric mixer until creamy. Add the egg and vanilla, mixing well to combine. Stir in graham cracker crumbs, flaked coconut, and chopped walnuts until evenly distributed. Press this mixture firmly into a 9×13-inch baking pan.
- Bake the Bars: Bake the pressed mixture in the preheated oven for 20 minutes, or until the bars are set and golden brown around the edges. Remove from the oven and set aside to cool completely.
- Make the Frosting: In a separate bowl, beat 1/2 cup unsalted butter until smooth and creamy. Gradually add 2 cups powdered sugar while mixing. Once combined, add 2 teaspoons milk and continue beating for 2 to 3 minutes until the frosting is light and fluffy.
- Spread the Frosting: Evenly spread the prepared frosting over the cooled bar layer. For easier spreading, chill the bars briefly after frosting before adding the chocolate layer (optional).
- Prepare the Chocolate Layer: Melt 12 oz of chocolate chips in the microwave in 30-second intervals, stirring well between each interval until smooth. Stir in 2 tablespoons of butter until fully melted and combined.
- Add the Chocolate Topping: Pour and smooth the melted chocolate mixture evenly over the frosting layer. Allow the chocolate to set at room temperature or chill until firm.
