- 2 carrots, chopped

Instructions
- Heat and Sauté: Heat the olive oil in a large pot over medium heat. Add the chopped carrots, diced onion, celery, sea salt, and several grinds of black pepper. Cook, stirring occasionally, for 8 minutes until the vegetables soften.
- Add Vinegar and Tomatoes: Stir in the white wine vinegar, then add the fire-roasted diced tomatoes, vegetable broth, white beans, grated garlic, diced potatoes, chopped cabbage, and dried thyme.
- Simmer the Soup: Cover the pot and simmer the soup for 30 minutes, or until the potatoes and cabbage are tender, stirring occasionally to prevent sticking.
- Season and Garnish: Adjust seasoning with additional salt and pepper if needed. Garnish with fresh parsley before serving.
Notes
- For a spicier kick, add crushed red pepper flakes when sautéing the vegetables.
- Use vegetable broth with low sodium to better control salt levels.
- If white beans are unavailable, cannellini or great northern beans are good substitutes.
- Leftovers can be stored in the refrigerator for up to 4 days and taste better after flavors meld.
- To make it vegan, ensure your vegetable broth contains no animal-derived ingredients.
