Ingredients
Scale
Chicken and Toppings
- 4 chicken breasts
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 4 slices mozzarella cheese
- 4 slices tomato
- 2 tablespoons basil, sliced
Balsamic Reduction
- 1/2 cup balsamic vinegar
- 2 tablespoons light brown sugar
Instructions
- Preheat Grill: Preheat your grill to medium-high heat to prepare for cooking the chicken breasts evenly.
- Season Chicken: Season the chicken breasts on both sides with Italian seasoning, garlic powder, onion powder, salt, and pepper for a flavorful base.
- Grill Chicken: Lightly spray the grill with non-stick cooking spray. Grill the chicken breasts until they are almost fully cooked, about 6-7 minutes per side depending on thickness.
- Melt Cheese: Place a slice of mozzarella cheese on each chicken breast. Close the grill lid and continue cooking for an additional 2-3 minutes until the cheese melts.
- Prepare Balsamic Reduction: While the chicken cooks, combine balsamic vinegar and brown sugar in a small saucepan. Simmer over medium heat for 10 minutes or until the mixture has reduced by half and thickened. Keep warm.
- Assemble and Serve: Remove the chicken from the grill and top each breast with a slice of tomato and fresh sliced basil. Drizzle generously with the warm balsamic reduction. Serve immediately and enjoy!
Notes
- Use boneless, skinless chicken breasts for even cooking.
- To ensure the chicken stays moist, avoid pressing down on it while grilling.
- If you don’t have a grill, this recipe can be adapted to a stovetop grill pan or oven broiler.
- The balsamic reduction can be made ahead and stored in the refrigerator for up to a week.
- Fresh basil can be substituted with dried basil, but use less as it is more concentrated in flavor.
- For a lower sugar option, reduce the brown sugar in the balsamic reduction or use a sugar substitute.
