Description

These festive Grinch Cookies are soft, chewy, and bursting with peppermint flavor, perfect for holiday celebrations. Made with white cake mix and a blend of peppermint and vanilla extracts, they are vibrantly green and topped with heart-shaped sprinkles for a fun and colorful treat.

Ingredients

Scale

Cookie Dough

  • 15.25 ounces white cake mix (432 g)
  • 8 tablespoons unsalted butter, softened
  • 2 large eggs, room temperature
  • 2 teaspoons peppermint extract
  • ½ teaspoon vanilla extract
  • Green gel food coloring, enough to achieve desired color

Coating

  • ¼ cup powdered sugar (32 g)
  • 3 tablespoons cornstarch

Topping

  • Red heart-shaped sprinkle or cinnamon hearts

Instructions

  1. Preheat and prepare baking sheet: Preheat the oven to 375°F. Line a large baking sheet with parchment paper and set aside.
  2. Mix the dough: Use a hand-held mixer or stand mixer to blend the white cake mix, softened butter, and eggs together until the mixture is well combined.
  3. Add flavor and color: Add the peppermint extract, vanilla extract, and enough green gel food coloring to achieve your desired shade. Mix on low speed just until combined; the batter will be thick and sticky.
  4. Prepare coating mixture: In a small bowl, whisk together the powdered sugar and cornstarch.
  5. Scoop and coat dough balls: Using a 1 1/2 tablespoon cookie scoop, form dough balls. Roll each ball in the powdered sugar and cornstarch mixture to coat thoroughly. Place the coated dough balls about 1 inch apart on the prepared baking sheet.
  6. Bake the cookies: Bake the cookies for 12 minutes or until the edges are set and the tops appear dry.
  7. Add toppings: Immediately after removing the cookies from the oven, place a red heart-shaped sprinkle or cinnamon heart on each cookie, gently pressing it down to adhere.
  8. Cool the cookies: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Store cookies in an airtight container at room temperature for up to 4 days to maintain freshness.
  • To freeze, cool the cookies completely and place them in an airtight, freezer-safe ziplock bag for up to 2 months. Thaw at room temperature or in the refrigerator overnight.
  • Use leftover Valentine’s Day sprinkles for the heart decorations or opt for cinnamon hearts for added flavor.
  • If desired, substitute the red heart-shaped sprinkles with jumbo heart sprinkles for a bolder look.
