Instructions
- Preheat and prepare baking sheet: Preheat the oven to 375°F. Line a large baking sheet with parchment paper and set aside.
- Mix the dough: Use a hand-held mixer or stand mixer to blend the white cake mix, softened butter, and eggs together until the mixture is well combined.
- Add flavor and color: Add the peppermint extract, vanilla extract, and enough green gel food coloring to achieve your desired shade. Mix on low speed just until combined; the batter will be thick and sticky.
- Prepare coating mixture: In a small bowl, whisk together the powdered sugar and cornstarch.
- Scoop and coat dough balls: Using a 1 1/2 tablespoon cookie scoop, form dough balls. Roll each ball in the powdered sugar and cornstarch mixture to coat thoroughly. Place the coated dough balls about 1 inch apart on the prepared baking sheet.
