A flavorful garlic mushroom pasta featuring sauteed cremini mushrooms, fresh garlic, and parmesan cheese, tossed with al dente pasta for a quick and delicious meal perfect for two.

Ingredients

Units Scale

Pasta

  • 4 ounces uncooked pasta

Sauce and Vegetables

  • 1 tablespoon olive oil
  • 3 tablespoons butter divided
  • 1/2 medium onion chopped
  • 8 ounces cremini mushrooms sliced
  • 3 cloves garlic minced
  • 1/2 teaspoon Dijon mustard
  • 1/4 cup chicken broth or vegetable broth or white wine
  • 1/2 teaspoon lemon juice
  • Zest of 1/2 lemon
  • 1/2 cup freshly grated parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: Boil a salted pot of water and cook the pasta al dente according to package directions, then reserve a couple tablespoons of hot pasta water before draining.
  2. Sauté mushrooms and onions: Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat. Add chopped onions and sliced mushrooms and sauté, stirring occasionally, until mushrooms release their water and it evaporates, and the mixture is browned and caramelized, about 10 minutes or slightly longer.
  3. Add garlic and mustard: Stir in the remaining butter, minced garlic, and Dijon mustard, cooking for about one minute until fragrant.
  4. Deglaze and flavor: Pour in the broth along with lemon juice and lemon zest. Let the mixture bubble for about one minute to combine flavors.
  5. Finish the sauce: Remove the skillet from heat. Stir in grated parmesan cheese and chopped parsley.
  6. Toss pasta with sauce: Add a splash of reserved hot pasta water to the sauce, then toss the cooked pasta with the sauce until well combined. Season with salt and pepper to taste and serve immediately.

Notes

  • This recipe serves 2 but can be stretched to feed 4 by increasing the pasta quantity if served alongside another dish.
  • When doubling the recipe, sautéing time for mushrooms and onions may increase to ensure proper caramelization.
  • Chicken broth can be substituted with vegetable broth or white wine according to dietary preferences.
  • For a vegetarian version, use vegetable broth instead of chicken broth.
  • Reserve some pasta water to adjust sauce consistency and help the sauce adhere to the pasta.
