  • 1 tbsp lemon juice
  • 1 tsp cornstarch
  • 1 tsp vanilla extract


Instructions

  1. Prepare Strawberries: Wash, de-stem, and slice the fresh strawberries in half or quarters. Reserve half of the berries in a mixing bowl for later use.
  2. Make Strawberry Puree: Place the remaining half of the strawberries into a blender or food processor and blend until fully pureed.
  3. Combine Ingredients and Cook: Pour the strawberry purée, cornstarch, lemon juice, and sugar into a saucepan. Mix well to combine. Heat over medium-high heat until it comes to a gentle boil, then reduce to low-medium heat and cook until thickened, which takes a few minutes. Test by dipping a spoon into the mixture; if the back remains coated, it is ready.
  4. Add Vanilla: Remove the pan from heat and stir in the vanilla extract until well combined.
  5. Strain and Mix: Pour the hot strawberry glaze through a mesh strainer into the bowl containing the fresh berries. Stir gently to coat all the berries evenly with the warm glaze.
  6. Cool and Serve: Allow the strawberry glaze to cool to room temperature or chill before using as a topping.
