  • 1 tablespoon butter
  • 8 oz cremini mushrooms, sliced
  • 1 small yellow onion, chopped
  • 1 teaspoon dry mustard
  • 1 tablespoon Worcestershire sauce
  • 2-3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup sour cream

  • Egg noodles, for serving


Instructions

  1. Prepare Chicken: Cut chicken into 1-inch pieces. Season liberally with salt and pepper, then toss in the 1/4 cup flour until evenly coated.
  2. Brown Chicken: Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Cook the chicken in batches if necessary until lightly browned on both sides, about 3 minutes per side. Remove the cooked chicken to a plate and set aside. Add remaining tablespoon of olive oil if needed for the second batch.
  3. Sauté Vegetables: Add butter to the same pan, then add sliced mushrooms and chopped onion. Cook until the mushrooms release their liquid and it evaporates, and the onions are soft, about 6 to 8 minutes.
  4. Add Seasonings: Stir in dry mustard, Worcestershire sauce, and minced garlic. Cook for 1 minute to release their flavors.
  5. Deglaze and Simmer: Pour in chicken broth and use a wooden spoon to scrape up any browned bits from the bottom of the pan. Return the browned chicken to the pan, stir, and let simmer for a few minutes until the chicken is cooked through and the sauce slightly thickens.
  6. Finish with Sour Cream: Reduce heat to low and stir in sour cream until fully incorporated. Season with additional salt and pepper to taste.
  7. Serve: Serve the chicken stroganoff hot over cooked egg noodles or mashed potatoes. Enjoy your meal!
