Ingredients
Scale
Chicken
- 2 boneless skinless chicken breasts (about 1 lb)
- 1/4 cup all-purpose flour, for dredging
- Kosher salt and freshly ground black pepper, to taste
Cooking
- 3 tablespoons olive oil
- 1 tablespoon butter
- 8 oz cremini mushrooms, sliced
- 1 small yellow onion, chopped
- 1 teaspoon dry mustard
- 1 tablespoon Worcestershire sauce
- 2-3 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup sour cream
Serving
- Egg noodles, for serving
Instructions
- Prepare Chicken: Cut chicken into 1-inch pieces. Season liberally with salt and pepper, then toss in the 1/4 cup flour until evenly coated.
- Brown Chicken: Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Cook the chicken in batches if necessary until lightly browned on both sides, about 3 minutes per side. Remove the cooked chicken to a plate and set aside. Add remaining tablespoon of olive oil if needed for the second batch.
- Sauté Vegetables: Add butter to the same pan, then add sliced mushrooms and chopped onion. Cook until the mushrooms release their liquid and it evaporates, and the onions are soft, about 6 to 8 minutes.
- Add Seasonings: Stir in dry mustard, Worcestershire sauce, and minced garlic. Cook for 1 minute to release their flavors.
- Deglaze and Simmer: Pour in chicken broth and use a wooden spoon to scrape up any browned bits from the bottom of the pan. Return the browned chicken to the pan, stir, and let simmer for a few minutes until the chicken is cooked through and the sauce slightly thickens.
- Finish with Sour Cream: Reduce heat to low and stir in sour cream until fully incorporated. Season with additional salt and pepper to taste.
- Serve: Serve the chicken stroganoff hot over cooked egg noodles or mashed potatoes. Enjoy your meal!
Notes
- For a thicker sauce, use heavy cream or add a little more flour when tossing the chicken.
- Cremini mushrooms can be substituted with button mushrooms if desired.
- To make it gluten-free, substitute all-purpose flour with a gluten-free flour blend and use gluten-free Worcestershire sauce.
- Cook egg noodles according to package instructions just before serving to keep them fresh and tender.
- If you prefer a tangier sauce, add a teaspoon of lemon juice or extra sour cream at the end.
