Description

Creamy Tuscan Garlic Shrimp is a rich and flavorful dish featuring succulent shrimp simmered in a luscious sauce made with heavy cream, sun-dried tomatoes, fresh spinach, and parmesan cheese. Perfectly seasoned and garnished with fresh basil, this easy skillet meal pairs beautifully with pasta, orzo, couscous, or mashed potatoes for a delicious dinner.

Ingredients

Scale

Shrimp and Seasoning

  • 1 pound shrimp – raw, peeled and deveined (tails on or off)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Sauce Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 small onion, diced
  • 1 tablespoon garlic, chopped
  • 7 oz jar sun dried tomatoes, drained and roughly chopped
  • 1 3/4 cup heavy cream
  • 2 cups fresh spinach leaves, loosely packed
  • 1/2 cup grated parmesan cheese

Garnish

  • Basil for garnish

Instructions

  1. Season the shrimp: Sprinkle the shrimp evenly with salt and pepper to enhance their natural flavor.
  2. Sear the shrimp: Heat the extra virgin olive oil in a large skillet over medium heat. Add the shrimp and cook, searing on both sides until they just start to turn pink and develop a light crust. Remove the shrimp from the pan and set aside.
  3. Sauté aromatics: Add the diced onion and chopped garlic to the same skillet. Cook for several minutes until the onions become translucent and fragrant, stirring occasionally to prevent burning.
  4. Add sun dried tomatoes: Stir in the roughly chopped sun dried tomatoes to the skillet and cook briefly to release their flavor into the aromatics.
  5. Create sauce: Pour in the heavy cream and stir well to combine all the ingredients into a creamy mixture.
  6. Add spinach and cheese: Stir the fresh spinach leaves and grated parmesan cheese into the sauce until the spinach begins to wilt and the cheese melts smoothly.
  7. Return shrimp to skillet: Add the seared shrimp back into the skillet, stirring gently to coat them well with the creamy sauce.
  8. Simmer: Allow the shrimp and sauce to simmer for several minutes until the sauce thickens slightly and the shrimp are fully cooked through.
  9. Serve and garnish: Spoon the creamy Tuscan garlic shrimp over cooked pasta, orzo, couscous, or mashed potatoes. Garnish with chopped fresh basil for a bright, herbal finish. Enjoy your meal!

Notes

  • Use raw shrimp that are peeled and deveined for the best texture and ease of cooking.
  • If you prefer a lighter sauce, substitute half-and-half for heavy cream, though the sauce will be less rich.
  • Sun dried tomatoes in oil work best for flavor; if using dry ones, rehydrate them first in hot water.
  • Fresh spinach is preferred for texture, but baby spinach can be used as a substitute.
  • Serve this dish immediately to enjoy the creamy sauce at its best consistency.
  • For a gluten-free version, serve with gluten-free pasta or a grain like quinoa.
