Chicken and Seasoning
- 1 lb Boneless, skinless chicken breasts or thighs
- 1-2 tbsp Kinders The Blend (or any salt, pepper and garlic blend)
- Salt and Pepper to taste
Cooking Base
- 1 tbsp Olive Oil
- 2 tbsp Salted Butter
- 2 Carrots, sliced
- 2 Celery Stalks, sliced
- 1 Yellow Onion, diced
- 3-4 Garlic Cloves, minced
Sauce and Pasta
- 1/4 cup All Purpose Flour
- 4 cups Chicken Broth
- 1 cup Heavy Cream
- 1/4 tsp Dried Thyme
- 1 tbsp Dried Parsley
- 1 tbsp Kinders Roast Chicken Seasoning (optional)
- 12 oz Bag of Dried Egg Noodles
Instructions
- Season the chicken: Generously coat the chicken breasts or thighs with Kinders The Blend seasoning or your preferred salt, pepper, and garlic blend.
- Cook the chicken: Heat olive oil and 1 tablespoon of butter in a skillet over medium heat. Cook the chicken for approximately 4-5 minutes per side until browned and cooked through. Remove the chicken and let it rest for about 5 minutes, then roughly chop or shred it as you prefer.
- Sauté vegetables: In the same skillet, add the sliced celery, diced onions, and sliced carrots. Season lightly with salt and pepper and cook for about 10 minutes until vegetables are softened. Add the minced garlic and cook for an additional 1 minute until fragrant.
- Make the roux: Stir in the flour and cook, stirring continuously, for 3-4 minutes to eliminate the raw flour taste and develop a light roux.
- Add liquids and seasonings: Slowly pour in the chicken broth and heavy cream while stirring to avoid lumps. Add dried thyme, dried parsley, and the Kinders Roast Chicken seasoning if using. Stir in the chopped chicken and the dried egg noodles along with the remaining chicken broth.
- Simmer the dish: Bring the mixture to a boil, then let it boil gently for 8 minutes. Reduce the heat to low and let it simmer for at least 20 minutes to allow the noodles to cook through and the sauce to thicken.
- Final seasoning and serve: Taste and adjust salt and pepper as needed. Serve the creamy chicken and noodles hot for a cozy and satisfying meal.
Notes
- Freezing is not recommended as the egg noodles become mushy when frozen and thawed.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat leftovers in the microwave or on the stove; add a splash of chicken broth to loosen the sauce if it becomes too thick.
