- 1 8 ounce round Brie cheese
- 1 sheet frozen puff pastry, thawed in the refrigerator
- Flour, for dusting work surface
- ¾ cup cranberry sauce
- ½ cup finely chopped pecans
- Sprigs of rosemary for garnish
- Sea salt to taste
Instructions
- Prepare Brie: Cut off and discard the rind from the Brie cheese. Place the cheese on a parchment-lined plate and freeze for 20 minutes to firm it up for easy cutting.
- Preheat Oven and Prepare Pan: Preheat the oven to 375℉. Generously grease a 24-cup mini muffin pan with cooking spray and set aside.
- Prepare Puff Pastry: On a lightly floured surface, roll the puff pastry sheet out into a 10×14-inch rectangle. Cut lengthwise into 4 even strips and crosswise into 6 strips, making 24 squares. Gently press each square into a muffin cup and prick the bottom with a fork.
- Cut Brie: Remove the chilled Brie from the freezer and cut into 24 pieces, about 3/4-inch each.
- Assemble Bites: Spoon 1 teaspoon of cranberry sauce into each muffin cup, press in a piece of Brie, and top with 1 teaspoon of chopped pecans. Sprinkle a pinch of sea salt on top if desired.
- Bake: Bake in the preheated oven until golden brown, about 20 minutes. Allow to cool slightly before removing from the pan.
- Serve: Garnish with rosemary sprigs and serve warm or at room temperature.
Notes
- Be generous when greasing the muffin tin to prevent sticking. Removing bites while still warm helps maintain shape.
- Store leftover bites in an airtight container at room temperature for up to 3 days.
- Freeze cooled bites for up to 2 months; freeze initially on a tray before placing in a container for best results.
- Reheat frozen bites in a 350℉ oven for 10 to 15 minutes until warmed through.
