Instructions

  1. Prepare the Chicken: Add the cold, diced cooked chicken breasts to a large mixing bowl and pour the fresh lemon juice over the chicken, tossing gently to coat evenly.
  2. Add Vegetables and Herbs: Add the diced celery, chopped green onions, and finely chopped fresh parsley to the bowl with the chicken.
  3. Mix the Dressing: Stir in the mayonnaise, Dijon mustard, and lemon zest into the chicken mixture. Season with salt and freshly ground black pepper to taste. Mix everything thoroughly until well combined.
  4. Serve or Chill: Serve the chicken salad immediately on bread slices or lettuce leaves. Alternatively, cover and chill in the refrigerator for up to 1 day to allow flavors to meld.
