Banana Bread Muffins
- 2/3 cup granulated sugar
- 1/2 cup vegetable or canola oil
- 2 large eggs
- 2/3 cup mashed ripe banana (about 2 small bananas)
- 1 teaspoon vanilla extract
- 1 2/3 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon

Instructions
- Preheat Oven and Prepare Pan: Heat oven to 375 degrees Fahrenheit. Spray a 12-cup muffin pan with nonstick cooking spray or line with parchment paper or muffin liners.
- Mix Wet Ingredients: In a medium bowl, whisk together sugar, oil, and eggs until well combined.
- Add Banana and Vanilla: Stir in mashed ripe bananas and vanilla extract until fully incorporated.
- Add Dry Ingredients: Add flour, baking soda, cinnamon, and salt to the wet mixture. Gently fold with a rubber spatula until just combined and no flour streaks remain.
- Fill Muffin Cups: Divide batter evenly among the muffin cups, filling each about 3/4 full to just below the top.
- Bake Muffins: Bake for 21 minutes or until a toothpick inserted into the center comes out clean and muffin tops are rounded and spring back when gently pressed.
- Cool Muffins: Remove from oven and let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool until they can be handled comfortably.
- Prepare Topping: Combine sugar and cinnamon in a small bowl. Place melted butter in a separate small bowl.
- Dip Muffins: Dip the top of each muffin into melted butter, then immediately into the cinnamon sugar mixture to coat. Serve warm or at room temperature.
