Instructions

  1. Preheat Oven and Prepare Pan: Heat oven to 375 degrees Fahrenheit. Spray a 12-cup muffin pan with nonstick cooking spray or line with parchment paper or muffin liners.
  2. Mix Wet Ingredients: In a medium bowl, whisk together sugar, oil, and eggs until well combined.
  3. Add Banana and Vanilla: Stir in mashed ripe bananas and vanilla extract until fully incorporated.
  4. Add Dry Ingredients: Add flour, baking soda, cinnamon, and salt to the wet mixture. Gently fold with a rubber spatula until just combined and no flour streaks remain.
  5. Fill Muffin Cups: Divide batter evenly among the muffin cups, filling each about 3/4 full to just below the top.
  6. Bake Muffins: Bake for 21 minutes or until a toothpick inserted into the center comes out clean and muffin tops are rounded and spring back when gently pressed.
  7. Cool Muffins: Remove from oven and let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool until they can be handled comfortably.
