- 1/4 cup granulated sugar for coating
Instructions
- Mix dry ingredients: In a bowl, combine the flour, ground ginger, ground cloves, ground nutmeg, unsweetened cocoa powder, and baking powder. Stir until well blended.
- Cream wet ingredients: In a separate bowl, beat together the room temperature butter, fresh grated ginger, brown sugar, and molasses using a mixer until the mixture is light and creamy.
- Combine mixtures: Gradually add the dry flour mixture into the molasses mixture, ½ cup at a time, beating at low speed until fully incorporated.
- Add chocolate: Fold the roughly chopped semi-sweet chocolate into the cookie dough evenly.
- Chill dough: Wrap the dough tightly in plastic wrap and refrigerate for at least one hour to firm up.
- Preheat oven and prepare sugar coating: When ready to bake, preheat the oven to 325ºF. Place the granulated sugar in a small bowl for rolling.
- Shape cookies: Divide the chilled dough into four equal parts, then cut each into six smaller pieces for a total of 24 cookies. Roll each piece into a ball and coat in granulated sugar.
- Arrange and bake: Place the sugar-coated dough balls on parchment-lined baking sheets, 12 per sheet. Bake for 12 minutes at 325ºF until the cookies are slightly cracked on top.
- Cool and serve: Transfer the cookies to a cooling rack and serve warm or at room temperature.
