Description

These rich and spicy Chocolate Molasses Cookies combine the deep flavors of molasses and warm spices with chunks of semi-sweet chocolate for a chewy, decadent treat perfect for any occasion.

Ingredients

Scale

Dry Ingredients

  • 1.5 cups all-purpose flour
  • 1.25 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1 Tbsp unsweetened cocoa powder
  • 1 tsp baking powder

Wet Ingredients

  • 8 Tbsp butter, room temperature
  • 1 Tbsp fresh grated ginger
  • 1/2 cup brown sugar
  • 1/2 cup molasses

Additional Ingredients

  • 4 oz. semi-sweet chocolate, roughly chopped
  • 1/4 cup granulated sugar for coating

Instructions

  1. Mix dry ingredients: In a bowl, combine the flour, ground ginger, ground cloves, ground nutmeg, unsweetened cocoa powder, and baking powder. Stir until well blended.
  2. Cream wet ingredients: In a separate bowl, beat together the room temperature butter, fresh grated ginger, brown sugar, and molasses using a mixer until the mixture is light and creamy.
  3. Combine mixtures: Gradually add the dry flour mixture into the molasses mixture, ½ cup at a time, beating at low speed until fully incorporated.
  4. Add chocolate: Fold the roughly chopped semi-sweet chocolate into the cookie dough evenly.
  5. Chill dough: Wrap the dough tightly in plastic wrap and refrigerate for at least one hour to firm up.
  6. Preheat oven and prepare sugar coating: When ready to bake, preheat the oven to 325ºF. Place the granulated sugar in a small bowl for rolling.
  7. Shape cookies: Divide the chilled dough into four equal parts, then cut each into six smaller pieces for a total of 24 cookies. Roll each piece into a ball and coat in granulated sugar.
  8. Arrange and bake: Place the sugar-coated dough balls on parchment-lined baking sheets, 12 per sheet. Bake for 12 minutes at 325ºF until the cookies are slightly cracked on top.
  9. Cool and serve: Transfer the cookies to a cooling rack and serve warm or at room temperature.

Notes

  • Use room temperature butter for easier creaming and better texture.
  • Ensure the dough is well chilled before baking to prevent spreading.
  • Store baked cookies in an airtight container to maintain freshness.
  • For a different flavor, try adding a pinch of cinnamon or swapping semi-sweet chocolate for dark chocolate.
  • Molasses gives a rich depth, but unsulfured molasses is preferred for better taste.
