Description

Delicious and easy-to-make Chocolate Covered Dates Stuffed with Peanut Butter combine the natural sweetness of Medjool dates with creamy peanut butter, crunchy peanuts, and a rich chocolate coating. Perfect as a healthy snack or a guilt-free dessert.

Ingredients

Scale

Dates and Filling

  • 12 Medjool dates
  • 1/3 cup all-natural smooth peanut butter
  • 1/4 cup peanuts, chopped

Chocolate Coating

  • 1/2 cup semi-sweet chocolate chips
  • 1 tsp coconut oil
  • Pinch flaky sea salt (optional for sprinkling)

Instructions

  1. Prepare dates: Line a baking sheet with parchment paper. Cut a slit into the center of each date lengthwise and remove the pit, taking care not to cut all the way through so the dates remain intact for stuffing.
  2. Stuff the dates: Generously fill each date with smooth peanut butter and sprinkle chopped peanuts inside. Place the stuffed dates on the prepared baking sheet.
  3. Melt chocolate: In a small bowl, combine the semi-sweet chocolate chips and coconut oil. Melt in the microwave in 30 second increments, stirring after each, until the mixture is smooth and fully combined.
  4. Coat dates with chocolate: Drizzle the melted chocolate evenly over the stuffed dates to coat them. Optionally, sprinkle with flaky sea salt for added texture and flavor.
  5. Chill: Refrigerate the chocolate-covered dates for about 30 minutes or until the chocolate has fully hardened and set before serving.

Notes

  • Store the stuffed dates in an airtight container in the refrigerator; they will keep fresh for up to 2 weeks.
  • Nutritional values are rough estimates and may vary depending on ingredient brands.
  • Use Medjool dates for the best texture and sweetness.
  • For a nut-free option, substitute peanut butter and chopped peanuts with sunflower seed butter and seeds.
  • Make sure not to overheat the chocolate to avoid burning or seizing it.
