  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan

  • 8 oz. pasta


Instructions

  1. Prepare Aromatics: Dice the onion and mince the garlic. Heat olive oil in a skillet over medium heat and sauté the onion and garlic until the onion is soft and transparent, about 5 minutes.
  2. Add Chipotle Powder: Stir in the chipotle powder and cook for an additional minute to release its smoky flavor.
  3. Create Sauce Base: Add the pumpkin purée, chicken broth, salt, and freshly cracked pepper to the skillet, stirring until the mixture is smooth and combined.
  4. Simmer Sauce: Reduce heat to medium-low and allow the sauce to simmer uncovered for 15 minutes to develop depth and thicken slightly.
  5. Cook Pasta: While the sauce simmers, cook the pasta according to the package instructions until al dente, then drain in a colander.
  6. Finish Sauce: Lower the heat to low and stir in the heavy cream to enrich the sauce.
