Description

  • 1 tablespoon Italian seasoning
  • 1 ½ cup tomato sauce (passata)
  • 1 cup half and half (single cream)
  • ½ cup Parmesan, grated
  • 2 tablespoons fresh parsley, chopped
  • Salt and freshly ground black pepper to taste


Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1-2 cups of pasta water, then drain the pasta.
  2. Cook the chicken: Heat olive oil and melt butter in a large deep pan or Dutch oven over medium heat. Add the cubed chicken breast and cook for 5-6 minutes until lightly golden on all sides.
  3. Sauté aromatics: Add the finely diced onion, chopped garlic, and red chili flakes to the pan. Cook, stirring occasionally, for 2 minutes until the onion softens.
  4. Add seasonings and sauce: Stir in Italian seasoning and tomato passata. Mix well, then pour in the half and half cream. Allow the sauce to simmer gently for 2-3 minutes on low heat.
  5. Combine pasta and cheese: Add the cooked pasta to the sauce and stir in the grated Parmesan cheese. If the sauce is too thick, adjust the consistency with reserved pasta water.
  6. Finish and serve: Stir in fresh chopped parsley, season with salt and black pepper to taste, and serve immediately for best flavor and texture.

Notes

  • Reserve pasta water to adjust the sauce consistency if it becomes too thick.
  • You can substitute half and half with heavy cream or whole milk for a lighter sauce.
  • For extra flavor, add sautéed mushrooms or bell peppers with the onions.
