- 1 Small Green Bell Pepper, diced
- 1 Small Yellow Onion, diced

- 2 Medium Russet Potatoes, peeled and chopped into bite-sized pieces
- 1 Whole Head Green Cabbage, chopped
- 4 Garlic Cloves, minced
Pantry & Seasonings
- 2 tbsp Garlic and Herb Seasoning
- 1 tsp Slap Ya Mama Seasoning (or any Cajun seasoning, optional for heat)
- 2 tbsp Tomato Paste
- 2 (14.5 oz) Cans Diced Tomatoes (preferably with basil, garlic, and oregano)
- 1 heaping tbsp Knorr Beef Bouillon
- 4 cups Water (or 4 cups beef or chicken broth)
- Salt and Pepper to taste
Instructions
- Brown the Ground Beef: Heat a Dutch oven over medium heat. Add the ground beef and cook until it is nicely browned, breaking it up as it cooks to ensure even browning.
- Sauté the Vegetables: Add the diced green bell pepper, yellow onion, sliced carrots, and celery to the pot with the beef. Season with garlic and herb seasoning, Slap Ya Mama seasoning, and black pepper. Sauté until the vegetables begin to soften and release their aromas.
- Add Tomato Paste: Stir in the tomato paste and cook it with the veggies and beef for a couple of minutes, stirring occasionally to deepen the flavors.
- Incorporate Potatoes: Add the peeled and chopped russet potatoes to the pot and stir well to combine all ingredients.
- Add Tomatoes and Garlic: Pour in the cans of diced tomatoes along with their juices, then add the minced garlic. Stir to mix all the ingredients thoroughly.
- Add the Cabbage: Add the chopped green cabbage in batches if needed, stirring it into the soup. Don’t worry if it seems like a lot; the cabbage will reduce significantly as it cooks.
- Add Bouillon and Liquid: Sprinkle the Knorr beef bouillon over the mixture and pour in the water (or broth). Stir until everything is well combined.
- Simmer the Soup: Bring the soup to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer gently for about 30 minutes, or until the potatoes and cabbage are tender.
- Season and Serve: Taste the soup and add salt and pepper as needed. Serve hot and enjoy your hearty cabbage soup with ground beef!
