Description

Delicious Brownie Cheesecake Bars combine rich, fudgy brownies with a creamy cheesecake layer, topped with chocolate ganache and crunchy Oreos for a perfect indulgent treat.

Ingredients

Scale

Brownie Layer

  • 1 box brownie mix for 9×13-inch pan
  • 11 Oreos, chopped

Cheesecake Layer

  • 8 ounces cream cheese, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar
  • 2 tablespoons sour cream

Ganache and Toppings

  • 1/4 cup chocolate chips
  • 1/4 cup heavy whipping cream
  • 11 Oreos, chopped

Instructions

  1. Preheat and Prepare Brownie Layer: Preheat your oven to 350 degrees Fahrenheit. Line an 8×8-inch baking dish with parchment paper or spray with cooking spray for easier cleanup. Prepare the brownie mix according to package directions and pour the batter into the pan. Press half of the chopped Oreos into the brownie batter. Bake until the top is set but still soft, as this is a partial bake. Let cool slightly while preparing the next layer.
  2. Make the Cheesecake Mixture: In a large bowl, beat the softened cream cheese until smooth using a hand or stand mixer. Add sugar, egg, and vanilla extract, then beat until well combined. Mix in sour cream until the mixture is creamy and lump-free.
  3. Bake Cheesecake Layer: Pour the cheesecake mixture over the partially baked brownie base and spread into an even layer using a spatula. Return the pan to the oven and bake for 30 minutes or until the center is just set—edges should look firm with a slight jiggle in the center. Allow bars to cool at room temperature for about 30 minutes, then chill in the refrigerator for at least 1 hour.
  4. Prepare Ganache and Add Toppings: Heat chocolate chips and heavy cream together in a small saucepan or microwave-safe bowl until warm. Stir until smooth and glossy. Spread the ganache evenly over the chilled cheesecake layer. Sprinkle the remaining chopped Oreos on top and press lightly to adhere. Chill for an additional 2 hours, or until fully set. For best results, chill overnight.

Notes

  • Pressing Oreos into the brownie batter before the first bake adds delightful crunch.
  • Partial baking the brownie layer prevents overcooking when baking again with the cheesecake layer.
  • Ensure cream cheese is softened for smooth cheesecake batter and no lumps.
  • Chill the bars thoroughly after baking for clean, easy slices.
  • The ganache can be doubled if a thicker chocolate layer is desired.
  • Use parchment paper with overhangs for easy removal of bars from the pan.
