Description

A delicious and easy-to-make Brown Sugar Pineapple Chicken featuring tender boneless chicken tenders marinated in a sweet and tangy pineapple-brown sugar BBQ sauce, grilled to perfection and brushed with reserved marinade for extra flavor.

Ingredients

Scale

Marinade

  • 1 cup pineapple juice
  • 6 Tbsp brown sugar
  • 6 Tbsp BBQ sauce

Chicken

  • 1.5 to 2 lb boneless chicken tenders

Instructions

  1. Prepare Marinade: Whisk together pineapple juice, brown sugar, and BBQ sauce in a bowl until the sugar is dissolved and ingredients are well combined. Reserve 1/4 cup of this marinade for later use.
  2. Marinate Chicken: Place the chicken tenders in a gallon-sized ziplock bag and pour the remaining marinade over the chicken. Seal the bag tightly and refrigerate for 2 to 4 hours to allow the flavors to infuse.
  3. Grill Chicken: Remove the chicken from the marinade and discard used marinade. Grill the chicken over medium heat for 8 to 10 minutes, turning occasionally, until the internal temperature reaches 165°F and the chicken is cooked through.
  4. Brush with Reserved Marinade: While grilling, brush the chicken on both sides with the reserved 1/4 cup marinade to enhance the flavor and create a sticky glaze.
  5. Serve: Remove the chicken from the grill and let it rest for a few minutes before serving. Enjoy the sweet and tangy grilled chicken as a main course.

Notes

  • For best flavor, marinate the chicken for the full 4 hours if time allows.
  • If a grill is unavailable, the chicken can be cooked on a stovetop grill pan or baked in the oven at 400°F for 20-25 minutes.
  • Use fresh pineapple juice for the best taste, but canned pineapple juice can be substituted.
  • Adjust the BBQ sauce quantity to your preferred flavor intensity.
  • Ensure chicken is cooked to an internal temperature of 165°F for food safety.
