Description

Bloody Eyeballs are a spooky and fun dessert featuring blueberry-stuffed longan fruit served with a vibrant berry sauce. This creative treat is perfect for Halloween or themed parties, combining the juicy sweetness of longans with tart blueberries and a fresh mixed berry puree.

Ingredients

Scale

Fruits

  • 2 pounds longan fruit
  • 1 pint blueberries
  • 1/2 pound frozen mixed berries (such as Trader Joe’s Very Cherry Frozen Berry Blend)

Instructions

  1. Peel Longans: Remove the skin from the longans by starting at the stem end, making the rest of the skin easy to peel off.
  2. Deseed Longans: Cut the longans in half, remove and discard the large inedible seeds in the center.
  3. Stuff with Blueberries: Place one blueberry inside the center of each halved longan piece to create the ‘eyeballs.’
  4. Prepare Berry Sauce: Blitz half of the frozen mixed berry blend in a blender or food processor until smooth to make a ‘bloody’ berry puree.
  5. Plate the Dish: Spread the berry puree on a plate and arrange the stuffed longan ‘eyeballs’ on top for serving.

Notes

  • You can substitute frozen berries with fresh ones if available for a brighter flavor.
  • Chilling the berry puree before serving enhances the refreshing taste of the dessert.
  • This dessert can be prepared a few hours ahead and refrigerated to allow flavors to meld.
  • Longan removal is easier if you roll the fruit gently between your palms before peeling.
  • For a variation, try using grapes instead of blueberries as stuffing.
