Ingredients
Scale
Filling
- 6 large Granny Smith apples peeled, cored, and ½” diced
- Juice of 1 lemon
- ¼ cup unsalted butter melted
- ½ cup granulated sugar
- 1 teaspoon cinnamon
- ½ teaspoon ground nutmeg
- 1 teaspoon kosher salt
- 1 teaspoon vanilla extract
- 1 Tablespoon all-purpose flour
- 1 teaspoon powdered ginger (optional)
Topping
- 1 cup all-purpose flour
- ½ cup granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon cinnamon
- Pinch of salt
- 2 Tablespoons unsalted butter cold, diced
- ½ cup whole milk
Instructions
- Preheat Oven: Preheat the oven to 350°F and grease a 10-inch pie dish or 9×13 inch baking dish to prevent sticking.
- Prepare Filling: In a large mixing bowl, combine the diced Granny Smith apples with lemon juice, melted butter, granulated sugar, cinnamon, nutmeg, kosher salt, vanilla extract, all-purpose flour, and optional powdered ginger. Toss thoroughly to coat the apples evenly.
- Transfer Filling: Pour the prepared apple filling mixture into the greased baking dish, spreading it out evenly.
- Make Topping: In another mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt. Cut in the cold, diced butter until the mixture resembles coarse crumbs. Gradually add the whole milk a little at a time until the dough reaches the consistency of wet cake batter.
- Assemble Cobbler: Drop spoonfuls of the topping dough over the apple filling to cover it mostly but some filling can peek through.
- Bake: Place the dish in the preheated oven and bake for 40 minutes or until the topping is golden brown and the filling is bubbling.
- Serve: Remove from the oven and let cool slightly before serving. Best enjoyed warm with a scoop of vanilla ice cream.
Notes
- Using Granny Smith apples provides the perfect balance of tartness and firmness for baking.
- The optional powdered ginger adds a subtle spicy note but can be omitted if unavailable.
- Cold butter cut into the dry ingredients helps create a crumbly, tender topping texture.
- Ensure the topping batter is not too runny; it should be thick enough to hold its shape when dropped in spoonfuls.
- Serve the cobbler warm with vanilla ice cream or whipped cream for added richness.
- To make ahead, prepare the filling and topping separately, refrigerate, then assemble and bake before serving.
